Observed employee use a knife to slice raw beef then wipe the knife with a cloth and place it in the clean knife rack. - (Correct By: Jul 29, 2021)
28 PF 7-102.11: Working containers used for storing POISONOUS OR TOXIC MATERIALS such as cleaners and SANITIZERS taken from bulk supplies shall be clearly and individually identified with the common name of the material.
Observed a spray bottle of a blue chemical stored without a label. COS
28 P 7-201.11: POISONOUS OR TOXIC MATERIALS shall be stored so they can not contaminate FOOD, EQUIPMENT, UTENSILS, LINENS, and SINGLE­ SERVICE and SINGLE-USE ARTICLES by: (A) Separating the POISONOUS OR TOXIC MATERIALS by spacing or partitioning; and (B) Locating the POISONOUS OR TOXIC MATERIALS in an area that is not above FOOD, EQUIPMENT, UTENSILS, LINENS, and SINGLE-SERVICE or SINGLE-USE ARTICLES. This paragraph does not apply to EQUIPMENT and UTENSIL cleaners and SANITIZERS that are stored in WAREWASHING areas for availability and convenience if the materials are stored to prevent contamination of FOOD, EQUIPMENT, UTENSILS, LINENS, and SINGLE-SERVICE and SINGLE-USE ARTICLES.
Several containers of toxic chemicals were stored on a ledge above the clean dish storage. COS

Chlorine sanitizer solution held near the cashier line was above 200 ppm. COS

The establishment has only a stem thermometer measuring from 50-500 degrees and an infrared thermometer available. Provide a thermometer that reads from 0-220 degrees. - (Correct By: Jul 29, 2021)
39 C 3-305.11 (A) (B) (C): (A) Except as specified in ¶¶ (B) and (C) of this section, FOOD shall be protected from contamination by storing the FOOD: (1) In a clean, dry location; (2) Where it is not exposed to splash, dust, or other contamination; and (3) At least 15 cm (6 inches) above the floor. (B) FOOD in packages and working containers may be stored less than 15 cm (6 inches) above the floor on case lot handling EQUIPMENT as specified under § 4-204.122. (C) Pressurized BEVERAGE containers, cased FOOD in waterproof containers such as bottles or cans, and milk containers in plastic crates may be stored on a floor that is clean and not exposed to floor moisture.
Soup in the warmer and Italian beef in the steam table were not covered. Cover all food products to prevent contamination and maintain by the next routine inspection.
41 C 3-304.14 (B)(1)(2): (B) Cloths in-use for wiping counters and other EQUIPMENT surfaces shall be: (1) Held between uses in a chemical sanitizer solution at a concentration specified under § 4-501.114; and (2) Laundered daily as specified under ¶ 4-802.11(D).
Wiping cloths were held after use on the prep line and tables. Store all in-use cloths in sanitizer solution and maintain by the next routine inspection.
41 C 3-304.14 (B)(1)(2): (B) Cloths in-use for wiping counters and other EQUIPMENT surfaces shall be: (1) Held between uses in a chemical sanitizer solution at a concentration specified under § 4-501.114; and (2) Laundered daily as specified under ¶ 4-802.11(D).
Chlorine sanitizer solution held at the prep line was below 50 ppm. Maintain chlorine sanitizer solution at 50-200 ppm by the next routine inspection. COS
43 C 3-304.12 (B): During pauses in FOOD preparation or dispensing, FOOD preparation and dispensing UTENSILS shall be stored: (B) In FOOD that is not TIME/TEMPERATURE CONTROL FOR SAFETY FOOD with their handles above the top of the FOOD within containers or EQUIPMENT that can be closed, such as bins of sugar, flour, or cinnamon.
A bowl was used to scoop flour from the bag. Use a scoop with a handle to prevent contamination and maintain by the next routine inspection. Repeat
49 C 4-602.13: NonFOOD-CONTACT SURFACES of EQUIPMENT shall be cleaned at a frequency necessary to preclude accumulation of soil residues.
There was a buildup of ice on the fan guard of the stand up freezer on the prep line. Repeat

58 Violation: Not all certified Food protection managers have completed allergen awareness training. Corrective Action: All employees that are certified food safety managers shall completed allergen awareness training by the next routine inspection.
Inspection Comments   CONTINUE TO MONITOR SOFT SERVE HOPPER TEMPERATURE: MUST STAY BELOW 41 DEGREES THROUGHOUT THE HOPPER. WILL CHECK TEMPERATURE ON FOLLOW UP JULY 29.
